- FOR THE CAKE
- 2 cups all purpose flour
- 2 cups sugar
- 2 eggs
- 2/3 cup chopped walnuts
- 1/3 cup shredded coconut
- 2 teaspoons vanilla extract
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 can 20oz. crushed pineapple with juice
- FOR THE FROSTING
- 1 package 8oz. cream cheese softened
- 1 stick butter softened
- 1 teaspoon vanilla extract
- 16oz powdered sugar
- chopped walnuts for garnish

Step 1Gather your ingredients

Step 2Preheat oven to 350 degrees

Step 3Lightly grease a 9 x 13 pan

Step 4Mix the flour, sugar, baking soda, salt, vanilla, eggs, coconut, chopped walnuts and pineapple with juice in a mixer bowl and combine thoroughly and pour into 9x13 baking pan

Step 5Bake for 25 to 30 minutes take out of the and start cooling it off

Step 6While waiting for cake to cool start making your frosting

Step 7Beat the cream cheese and butter together until creamy

Step 8Add sugar and vanilla and beat until creamy Note: The frosting will be thick

Step 9While cake is still warm but not hot poke holes in the cake, put on frosting and garnish with chopped walnuts
