You may substitute 6 child containers of apple sauce for the 4 cups of chopped apples, if you prefer, if you're in a hurry.

Ingredients

  • 4 cups chopped apples or 6 child containers of apple sauce
  • 1 cup chopped pecans/or what types of nuts you prefer
  • 3/4 cup very good cooking oil (don't scrimp on the cost;it makes a difference in the taste)
  • 2 cups granulated sugar
  • 2 large eggs, beaten
  • 1 teaspoon good vanilla flavoring
  • 2 cups all purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • GLAZE FOR CAKE
  • 1/2 cup powdered sugar
  • 2-4 tablespoons fresh lemon juice (depending on how thick or thin you like it)

How To Make betty's fresh apple cake

  • Step 1
    Mix together oil, sugar, eggs and vanilla. Add apples or apple sauce and nuts and mix well. Sift dry ingredients together and add to the wet mixture. Pour into a greased and floured bundt pan. Bake in a 325 degree oven for 60 minutes, or until a toothpick inserted comes out clean.
  • Step 2
    Glaze: Mix together powdered sugar with a small amount of lemon juice and dizzle over the cooled cake.
