best lemon bars

Every time I make these, I get requests for the recipe. They are great at pot-lucks, or bake sales!! Also good for concession stands at high school sports activities!!

Ingredients
- 1 1/2 cups flour
- 2/3 cup powdered sugar
- 3/4 cup butter, softened
- 3 - eggs
- 1 1/2 cups granulated sugar
- 3 tablespoons flour
- 1/4 cup lemon juice
- 1/3 cup powdered sugar (optional)
How To Make best lemon bars

Step 1Preheat oven to 375 degrees. Grease a 9 X 13 inch baking pan.

Step 2Combine the flour, 2/3 cup powdered sugar, and butter. Pat dough into prepared pan.

Step 3Bake 20 minutes in preheated oven, until lightly golden brown. While crust is baking, whisk together the eggs, granulated sugar, 3 Tbsp. flour, and lemon juice until frothy. Pour this mixture over the hot crust.

Step 4Return to oven for an additional 20-25 minutes, or until light golden brown.

Step 5Cool in the pan, on a wire rack.

Step 6Dust with powdered sugar, if desired. Cut into squares.
