best ever chocolate cake

My cousin gave me this recipe in 1963, shortly after I got married. I've made it many times and family and friends always rave about it. The first time I made it, I was sure I did something wrong because the batter was very watery. I baked it and it was just wonderful. So don't panic if you batter is different than a regular cake mix.

Ingredients

  • 2 cups all purpose flour
  • 2 cups sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 3/4 cup hershey's baking cocoa
  • 1 teaspoon baking soda
  • 1/2 cup vegetable oil
  • 1 cup milk
  • 1 cup strong coffee (cooled) water may be substituted
  • 2 - eggs
  • 1 teaspoon vanilla extract

How To Make best ever chocolate cake

  • Step 1
    Sift first 6 ingredients together. Set aside
  • Step 2
    Put last 5 ingredients in the large bowl of an electric mixer. Beat on low until combined.
  • Step 3
    Add dry ingredients slowly and beat on low until combined. Then beat on medium/high for 3 minutes.
  • Step 4
    Spray 2 9-inch round cake pans with non-stick spray. Pour batter evenly between them.
  • Step 5
    Bake in a preheated 350 degree oven for 30-35 minutes or until a toothpick inserted in the center comes out clean. Don't overbake. Cool on wire racks.
  • Step 6
    Frost with icing of your choice. Cream cheese is always good - or - chocolate is even better for all the chocoholics out there.
