This cake recipe belongs to Lisa Glass and by no means am I trying to take credit to this wonderful cake, just changed the frosting. This is the best chocolate cake I've made in a long time, have made four here in Lewiston, Id and one in Utah. Today is one of our granddaughter's birthday and so we made a cake to celebrate even though she lives in Gooding Idaho, we made a cake for her LOL I didn't make the frosting that was in Lisa recipe, its a little too sweet for my husband so I made a cream cheese frosting and just put it on the top of the cake, also I used a bundt cake pan.

Ingredients

  • 1 3/4 cups all purpose flour
  • 2 cups sugar
  • 3/4 cup cocoa, unsweetened
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup strong black coffee
  • 2 large eggs
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla (real)
  • - cream cheese frosting ingredients
  • 1/2 cup margarine softened ( i used real butter)
  • 2 ounces melted unsweetened chocolate
  • 3 cups powdered sugar
  • 3 tablespoons mikt
  • 2 teaspoons real vanilla extra

  • Step 1
    Directions 1 Combine flour, sugar, cocoa, baking soda, baking powder, and salt in a large mixing bowl or stand mixer.
  • Step 2
    Add eggs, coffee, buttermilk, oil, and vanilla.
  • Step 3
    Beat at medium speed for two minutes. Batter will be thin.
  • Step 4
    Pour batter into a greased and floured 9x13 pan or two 9 inch cake pans.
  • Step 5
    Bake at 350 degrees for 35-40 minutes for a 9x13, or 30-35 minutes for layer pans.
  • Step 6
    Combine frosting ingredients and mix with a hand or stand mixer. Spread frosting on cooled cakes.
