- 1/2 cup softened butter, salted
- 1/4 cup canola oil
- 2 1/8 cups sugar
- 2 teaspoons lemon juice
- 1 1/2 cups buttermilk
- 3 - eggs
- 2 teaspoons vanilla
- 1/2 teaspoon salt
- 2 teaspoons baking soda
- 3 cups all-purpose flour
- 3-4 - smashed, very ripe bananas
- CREAM CHEESE ICING
- 1/2 cup softened butter
- 8 oz. - softened cream cheese
- 1 teaspoon vanilla
- 3 cups confectioners' sugar
How To Make best ever banana bundt cake

Step 1Preheat oven to 350 degrees.

Step 2Grease and flour a bundt pan and set aside.

Step 3Smash the bananas and mix in the lemon juice and set aside.

Step 4Combine butter, oil and sugar and mix thoroughly, then set aside.

Step 5Add eggs one at a time and mix just until combined.

Step 6Add vanilla, salt and buttermilk. Mix well.

Step 7Add baking soda and flour. Mix gently. Then add bananas and mix gently again.

Step 8Pour the cake batter evenly into the bundt pan. Do not fill bundt pan more than 2/3 full.

Step 9Bake in oven 50-60 minutes or until toothpick comes out clean.

Step 10Immediately after removing cake from oven, put it (still in the bundt pan) into the freezer for 45-60 minutes.

Step 11Remove and frost with the cream cheese icing.
