best chocolate cake ever

My daughter is very picky. I make this every year for my daughter's birthday. She just requests it every year. She just loves it.

Ingredients

  • 2 cups sugar
  • 2 sticks butter,unsalted
  • 4 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 2 3/4 cups all purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups water
  • 1 cup cocoa powder
  • - frosting:
  • 14 tablespoons butter, unsalted at room temp.
  • 1(8 oz) - cream cheese
  • 1 cup sour cream
  • 1/4 cup cocoa powder
  • 1 teaspoon vanilla extract
  • 16 ounces semisweet baking chocolate squers
  • 2 1/2 cups confectioners' sugar

How To Make best chocolate cake ever

  • Step 1
    In sauce pan bring the water to a boil,then turn off heat and whisk in the cocoa.Mix until smooth.Put aside and let it cool.In separate bowl mix together flour, baking soda,powder and salt,set aside.
  • Step 2
    Mix together butter, sugar,vanilla.Add eggs,one at the time,mix until fluffy.Alternately add the flour mixture and the cool cocoa mixture,until combine.
  • Step 3
    Prepare two 9 inch round cake pans (or any pan you prefer ,I made three different sizes square pans).
  • Step 4
    Bake in 350 degrees preheat oven,for 45 minutes,or until toothpick comes out clean.Cool completely.
  • Step 5
    For the frosting: melt the chocolate in a double boiler,stirring constantly.Cool.In a bowl mix together the confectioners'sugar and cocoa.Set aside.
  • Step 6
    In the mixer bowl,mix together the butter and cream cheese until fluffy. Add the confectioners' sugar mixture,sour cream and vanilla.
  • Step 7
    Slowly add the melted ,cool chocolate.Mix just until combine.
  • Step 8
    Split each layer of the cake in half.Spread frosting on top of each layer.Spread evenly on top and on the sides.Decorate.
