I love blueberries! This is a great recipe for a morning brunch.
ONe of my favorites.

Ingredients

1/3 c
+ 1 tablespoon vegetable oil
3/4 c
sugar
1
egg
1 1/2 c
flour
2 1/2 tsp
baking powder
1/4 tsp
salt
1 tsp
vanilla
1/2 c
milk
1 lb
frozen blueberries (a little over 3 cups)
topping ingredients
1/4 c
sugar
1/4 c
brown sugar
1/2 c
flour
1/2 tsp
cinnamon
3 Tbsp
butter, melted

How to Make Best Blueberry Coffeecake

Step-by-Step

  • 1Place vegetable oil & 3/4 cup sugar in mixing bowl and cream together using wire whisk on low speed of mixer for 10 to 15 minutes.
  • 2Add eggs and vanilla, mix on medium speed for 5 minutes until light and fluffy.
  • 3Sift together flour, baking powder and salt.
  • 4While mixing on low speed add sifted dry ingredients alternately with milk. Mix for 2 minutes.
  • 5Spread in light greased 2-quart oblong baking dish. (Batter will be very thick)
  • 6Sprinkle 1 pound frozen blueberries over the top of batter.
  • 7Mix remaining flour, brown sugar, sugar, cinnamon and melted butter until crumbly.
  • 8Sprinkle topping over blueberries.
  • 9Bake at 350 degrees for 55 minutes or until done.
