best blueberry coffeecake

I love blueberries! This is a great recipe for a morning brunch. ONe of my favorites.

Ingredients

  • 1/3 cup + 1 tablespoon vegetable oil
  • 3/4 cup sugar
  • 1 - egg
  • 1 1/2 cups flour
  • 2 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • 1/2 cup milk
  • 1 pound frozen blueberries (a little over 3 cups)
  • - topping ingredients
  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 1/2 cup flour
  • 1/2 teaspoon cinnamon
  • 3 tablespoons butter, melted

How To Make best blueberry coffeecake

  • Step 1
    Place vegetable oil & 3/4 cup sugar in mixing bowl and cream together using wire whisk on low speed of mixer for 10 to 15 minutes.
  • Step 2
    Add eggs and vanilla, mix on medium speed for 5 minutes until light and fluffy.
  • Step 3
    Sift together flour, baking powder and salt.
  • Step 4
    While mixing on low speed add sifted dry ingredients alternately with milk. Mix for 2 minutes.
  • Step 5
    Spread in light greased 2-quart oblong baking dish. (Batter will be very thick)
  • Step 6
    Sprinkle 1 pound frozen blueberries over the top of batter.
  • Step 7
    Mix remaining flour, brown sugar, sugar, cinnamon and melted butter until crumbly.
  • Step 8
    Sprinkle topping over blueberries.
  • Step 9
    Bake at 350 degrees for 55 minutes or until done.
