I love blueberries! This is a great recipe for a morning brunch. ONe of my favorites.

Ingredients
- 1/3 cup + 1 tablespoon vegetable oil
- 3/4 cup sugar
- 1 - egg
- 1 1/2 cups flour
- 2 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla
- 1/2 cup milk
- 1 pound frozen blueberries (a little over 3 cups)
- - topping ingredients
- 1/4 cup sugar
- 1/4 cup brown sugar
- 1/2 cup flour
- 1/2 teaspoon cinnamon
- 3 tablespoons butter, melted
How To Make best blueberry coffeecake

Step 1Place vegetable oil & 3/4 cup sugar in mixing bowl and cream together using wire whisk on low speed of mixer for 10 to 15 minutes.

Step 2Add eggs and vanilla, mix on medium speed for 5 minutes until light and fluffy.

Step 3Sift together flour, baking powder and salt.

Step 4While mixing on low speed add sifted dry ingredients alternately with milk. Mix for 2 minutes.

Step 5Spread in light greased 2-quart oblong baking dish. (Batter will be very thick)

Step 6Sprinkle 1 pound frozen blueberries over the top of batter.

Step 7Mix remaining flour, brown sugar, sugar, cinnamon and melted butter until crumbly.

Step 8Sprinkle topping over blueberries.

Step 9Bake at 350 degrees for 55 minutes or until done.
