1 c
all-purpose flour
7 Tbsp
sugar or splenda sugar or stevia,divided
1/2 tsp
baking powder
1/2 tsp
1/2 tsp
ground cinnamon
1/8 tsp
salt or light salt
large egg
3 Tbsp
vegetable oil
1/2 tsp
almond extract
1/2 c
1 bag(s)
frozen mixed berries or fruit
3 c
plain nonfat greek yogurt or cool whip


1Preheat oven to 350F.
Meanwhile, combine flour, all but 2 teaspoons of sugar or Splenda sugar, baking powder, baking soda, cinnamon, salt, buttermilk, egg, oil and extract in medium bowl.
2Whisk together until smooth and pour into an 8-inch baking pan coated with cooking spray. top with frozen berries or fruit.
3Bake 1 hour or until browned and a wooden pick inserted 2 inches from edge come out clean.
Remove from oven place pan on cooling rack and sprinkle with remaining sugar.
Serve hot, warm or room temperature with yogurt on the side or Cool whip.
4Cal;206 carbs;17 Buttermilk use milk but some vinegar make it sour.
