After being underwhelmed by a few dump cake recipes I’d tried, I came up with this simple version that suited our household’s tastes better. Using frozen berries instead of pie filling allows the taste of the fruit to shine. Sandwiching it between two boxes of cake mix creates an interesting combination of textures. Don’t skimp on greasing the pan; the melting fat will combine with the mix to create a slightly crunchy bottom crust. I haven’t tried it with other fruits, such as all blueberries or perhaps frozen peaches, but further experimenting might result in other fun flavors.

Ingredients

  • butter, shortening or cooking spray
  • 2 boxes white cake mix
  • 2 to 3 pounds frozen mixed berries
  • 1 1/4 cups butter, melted

How To Make “berry bliss” two-box dump cake

  • Oven preheated to 350 degrees Fahrenheit
    Step 1
Preheat oven to 350 degrees F.
  • 9”x13” cake pan greased with butter
    Step 2
Generously grease a 9” x 13” baking pan with butter (recommended), shortening, or cooking spray.
  • First layer of cake mix spread in pan
    Step 3
Remove one bag of cake mix from its box and gently knead or shake it to break up any clumps. Sprinkle the mix evenly into the bottom of the cake pan.
  • Frozen mixed berries spread over first layer of cake mix. 40 oz of berries used in this example.
    Step 4
Pour the frozen berries evenly over the layer of cake mix in the pan.
  • Second layer of cake mix sprinkled over top of berries
    Step 5
Remove the remaining bag of cake mix from its box, again kneading or shaking it to break up clumps. Sprinkle the mix evenly over the layer of frozen berries in the cake pan.
  • Butter melting in microwave
    Step 6
Melt 1 1/4 cups of butter in the microwave.
  • Using a fork to even out melted butter after pouring it over top layer of cake mix
    Step 7
Pour the melted butter as evenly as possible over the upper layer of cake mix in the pan. If necessary, you may use a fork to lightly rake the butter more evenly across the cake mix where needed, but do not try to stir it into the mix.
  • Cake finished baking and ready to be taken out of the oven
    Step 8
Bake at 350 degrees for 50 to 55 minutes, until the top begins to turn golden brown.
  • Step 9
Remove the cake from the oven and allow it to cool completely before serving.
  • Final result, a piece of Berry Bliss cake on a plate
    Step 10
Serve plain or with ice cream or whipped topping. Store any leftover cake in the refrigerator.
