This recipe came from a very old friend whose family had used this recipe for many years.

Ingredients

  • 1 1/2 cups sugar
  • 3 - eggs, at room temperature
  • 1 cup salad oil
  • 1 1/2 cups canned beets, sieved
  • 2 - squares semisweet chocolate
  • 1 3/4 cups flour
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 can cream cheese frosting
  • 1/4 cup chopped walnuts

How To Make beet cake

  • Step 1
    Cream sugar, eggs and oil. Blend beets and melted chocolate together. Sift flour, baking soda and salt. Add all ingredients together and add vanilla extract.
  • Step 2
    Grease and dust with flour. Bake at 350F in 2 eight inch pans or 2 nine inch pans for 20-25 minutes. Let it cool.
  • Step 3
    Spread cream cheese frosting over cake. Sprinkle with walnuts.
