I have a friend who said they wished they had a good, basic lemon cake recipe that tasted like real lemons and not just a yellow cake mix (her words!).

I found this recipe online (allrecipes) and added a little more lemony goodness to it.

Ingredients

  • CAKE

  • 1 c
    butter, softened
  • 2 c
    sugar
  • 4
    eggs
  • 1 1/2 tsp
    lemon extract
  • 1 1/2 tsp
    vanilla
  • 1 c
    juice of 3 lemons + milk to make 1 cup total
  • 3 c
    flour
  • 2 tsp
    baking powder
  • 1 Tbsp
    lemon zest (i used zest of 3 lemons)
  • GLAZE

  • 1/4 c
    lemon juice
  • 1 Tbsp
    water
  • 1/2 tsp
    lemon extract
  • 3/4 c
    powdered sugar
  • ·
    zest of 1 lemon

How to Make Basic Lemon Bundt Cake

Step-by-Step

  1. Heat oven to 350 degrees. Generously grease bundt pan.
  2. Cream together butter and sugar. Add eggs one at a time, combining well after each egg. Add in extracts. Combine flour and powder. Add to sugar mixture 1 cup at a time, alternating with milk/lemon juice. Stir in zest.
  3. Pour batter into prepared pan. Bake at 350 degrees for 60-70 minutes until wooden pick inserted comes out clean. Cool in pan pan for 10 minutes before inverting on pan/wire rack to cool completely.
  4. Prepare glaze by combining all ingredients together until smooth. Drizzle over smooth cake and pucker up!!!
