Ingredients For barbara's mandarin/pineapple cake

  • box
    1 yellow cake mix
  • 4 eggs
  • oz
    1-11 ounce can mandarin oranges
  • 1 large can crushed pineapple
  • 1 tub cool whip
  • 2 tbl sour cream
  • pkg
    1 pistachio flavor instant pudding
  • sweet shredded coconut
  • nuts { toasted almonds, chopped pecans etc.}

How To Make barbara's mandarin/pineapple cake

  • 1
    mix cake mix,mandarin oranges with the juice, 1/2 can of the crushed pineapple and eggs, mix well and pour into round cake pans, bake at 350 for 30 minutes
  • 2
    mix pudding, sour cream and remainder of the crushed pineapple with cool whip and set a side
  • 3
    cool cakes and frost with cool whip mixture, mound the top with sweet coconut and wrap toasted almonds or pecan around from bottom to top of cake
