1/2 stickbutter (softened)
3very ripe bananas
3 - 4 Tbspnutella
1 1/3 cself-rising flour*
1/2 cchocolate chips (optional--adjust for taste)
1/2 calmonds, slivered (optional)
CINNAMON GLAZE - OPTIONAL
1/2 cconfectioners' sugar (these are approximations)
How to Make Bananella Loaf
- Preheat oven to 350 degrees.
Put first five ingredients in a bowl and mash with potato masher or fork. Small banana lumps are acceptable but try to get a mush-like consistency.
- Sift flour and add to wet ingredients. Stir in chocolate chips if desired.
- Pour batter into 9" x 5" x 3" loaf pan (other sizes would work--if using mini loaves bake approximately 30 minutes. Test with skewer or knife in middle until it comes out clean.
Sprinkle slivered almonds on top, if desired.
Bake approximately 45-50 minutes. May need more time.
Cool on rack for 10 minutes, remove from pan. Drizzle with cinnamon glaze, if desired.
- *All-purpose flour is fine--just add 1/2 teaspoon baking soda, 1/2 teaspoon baking powder and 1/2 teaspoon salt and sift together with flour.
