I had very little time to whip up something for a party today. I got great feedback on this--and my sister said it was fantastic and a definite keeper! It's so quick and easy to make!

Ingredients

  • 1/2 stick butter (softened)
  • 2 - eggs
  • 3 - very ripe bananas
  • 2/3 cup sugar
  • 3 - 4 tablespoons nutella
  • 1 1/3 cups self-rising flour*
  • 1/2 cup chocolate chips (optional--adjust for taste)
  • 1/2 cup almonds, slivered (optional)
  • CINNAMON GLAZE - OPTIONAL
  • 1 teaspoon cinnamon
  • 1/4 cup milk
  • 1/2 cup confectioners' sugar (these are approximations)

How To Make bananella loaf

  • Step 1
    Preheat oven to 350 degrees. Put first five ingredients in a bowl and mash with potato masher or fork. Small banana lumps are acceptable but try to get a mush-like consistency.
  • Step 2
    Sift flour and add to wet ingredients. Stir in chocolate chips if desired.
  • Step 3
    Pour batter into 9" x 5" x 3" loaf pan (other sizes would work--if using mini loaves bake approximately 30 minutes. Test with skewer or knife in middle until it comes out clean. Sprinkle slivered almonds on top, if desired. Bake approximately 45-50 minutes. May need more time. Cool on rack for 10 minutes, remove from pan. Drizzle with cinnamon glaze, if desired.
  • Step 4
    *All-purpose flour is fine--just add 1/2 teaspoon baking soda, 1/2 teaspoon baking powder and 1/2 teaspoon salt and sift together with flour.
