bananella loaf
I had very little time to whip up something for a party today. I got great feedback on this--and my sister said it was fantastic and a definite keeper! It's so quick and easy to make!

How To Make bananella loaf
-
Step 1Preheat oven to 350 degrees. Put first five ingredients in a bowl and mash with potato masher or fork. Small banana lumps are acceptable but try to get a mush-like consistency.
-
Step 2Sift flour and add to wet ingredients. Stir in chocolate chips if desired.
-
Step 3Pour batter into 9" x 5" x 3" loaf pan (other sizes would work--if using mini loaves bake approximately 30 minutes. Test with skewer or knife in middle until it comes out clean. Sprinkle slivered almonds on top, if desired. Bake approximately 45-50 minutes. May need more time. Cool on rack for 10 minutes, remove from pan. Drizzle with cinnamon glaze, if desired.
-
Step 4*All-purpose flour is fine--just add 1/2 teaspoon baking soda, 1/2 teaspoon baking powder and 1/2 teaspoon salt and sift together with flour.
