Ingredients
- 2/3 cup butter or shortening (we recommend butter)
- 1 1/2 cups sugar
- 2 large eggs, separated
- 1 cup mashed ripe bananas (2 large or 3 medium
- 1 1/2 cups all purpose flour (we use jules all purpose gluten free flour)
- 1 teaspoon baking soda
- 1/4 cup milk with 1 tsp. of cider vinegar added
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts

Step 1Preheat oven to 350

Step 2Spray a 9 x 13 glass baking dish with non-stick cooking spray.

Step 3Separate eggs and beat the egg whites until soft peaks form, set aside. In a large mixing bowl, creams shortening or butter with sugar. Beat in egg yolks, mix well, add bananas, mix well again.

Step 4In a separate bowl mix flour and baking soda together, then add it to the creamed banana mixture alternately with the milk until all is mixed in.

Step 5Add vanilla then fold in egg whites and chopped nuts.

Step 6Bake at 350F for 45-50 minutes

Step 7Cool in pan on cooling rack.

Step 8Frost with your favorite butter cream vanilla or cream cheese frosting and top with extra chopped walnuts if desired.
