banana pudding balls
I was taught this recipe when I was about 13 years old. My mom had a bunch of over ripe bananas. I never forgot it,and I hope you enjoy it.

Ingredients
- PREPARE YOUR FAVORITE PANCAKE DOUGH
- MIX JUST TIL MOISTENED......... DO NOT OVER MIX......ADD
- 1 teaspoon cardamom
- 1 teaspoon cinnamon
- 2 teaspoons vanilla extract
- 1 tablespoon baking powder
- 2 tablespoons sugar
- BETTER SHOULD BE THICK, IF NOT ADD FLOUR OR MORE PANCAKE MIX
- 2 slices bananas over ripe
- 1 1/2 cups canola oil for frying
How To Make banana pudding balls

Step 1Bring frying oil to 360F (temp. for deep frying)

Step 2After mixing together your pancake batter....

Step 3Add the cardamon, cinnamon, vanilla, baking powder, and sugar

Step 4Mix together till moisten

Step 5submerge each slice of bannana in pancake mix (one at a time )

Step 6Pick up with skewer

Step 7carfully place in frying oil * as soon as banana hit the oil ( turn over to other side) ... this ensures even cooking on both sides. Aprox. 2 min. on each side.

Step 8drain on paper towel

Step 9Cover each ball with coating of choice ENJOY !
