1MASH bananas,then pour oil over bananas,and let stand while mixing cake .Cream,sugar and eggs ,(one egg at time),beating well.
2STIR in bananas mixture and mix well.
ADD dry ingredients which have been combined- flour,soda cinnamon,ground cloves and salt.
3Stir in ,and mix thoroughly raisins and pecans.
Spoon mixture into 3 greased loaf pans(.OR Two medium round or square cake pans).
4Preheat oven to 350* for @ 10minutes,
5Bake @ 250* for 1 1/2 or until tooth pick comes out clean.
6CREAM CHEESE frosting add 2 ( 8 oz )light or fat free cream cheese room temp. Add 2 tsp of banana flavor extract 1/2 of light sour cream, 2tablespoons of vanilla flavor of soy milk 1/4 cup of splendor .MIX ON LOW SPEED,until everything is well blended ..DECO.your cakes and top it some fine crushed pecans .ADD 8 oz of low fat whip cream and folding into the frosting mix well .AND ENJOY IT ,put a smile on someones face.
