    flour
  • 1 tsp
    salt
  • 1 Tbsp
    cinnamon, ground
  • 1 Tbsp
    cloves, ground
  • 3 tsp
    baking powder
  • 3 large
    eggs
  • 1/2 c
    brown sugar
  • 1/2 c
    honey
  • 3/4 c
    vegetable oil
  • 1/2 c
    pineapple juice
  • 1 c
    carrots, grated
  • 1 c
    bananas, mashed
  • 1 c
    walnuts, chopped

How to Make Banana Nut Carrot Cake Squares

Step-by-Step

  1. Preheat the oven to 350; grease a 9"x12" baking pan.
  2. In a large bowl sift together the flour, cinnamon, cloves and baking powder.
  3. In a smaller bowl beat together the eggs; add sugar and honey; whisk in the oil and juice.
  4. Mix into the dry ingredients.
  5. Stir in the carrots, bananas and walnuts.
  6. Pour mixture into the baking dish; bake 40 to 45 minutes or until a toothpick inserted into the center comes out clean.
  7. Cool 50 to 60 minutes; serve with vanilla ice cream or yogurt.
  8. NOTE: May use apple or orange juice in place of pineapple juice.
