Ingredients

  • 1/2 cup margarine, softened
  • 1-1/2 cup light brown sugar
  • 2 large eggs
  • 1-1/2 teaspoon vanilla flavoring (recipe don't call for it, but i add it)
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon soda
  • 1/4 cup buttermilk
  • 1 cup mashed bananas
  • 1 cup chopped nuts
  • ICING
  • 1 stick margarine
  • 1 cup light brown sugar
  • 2/3 cup evaporated milk
  • 1-1/2 teaspoon vanilla flavoring (recipe don't call for it, but i add it)

How To Make banana nut cake

  • Step 1
    Cream sugar, butter, eggs and flavoring until fluffy and smooth. Sift together flour, salt and soda; add to dry mixture, alternating with buttermilk. Stir in bananas and chopped nuts.
  • Step 2
    Pour into a greased 9 inch square pan (I use a 9 x 9 x 2). Bake at 350 for 45 minutes.
  • Step 3
    In a small saucepan, combine all ingredients. Boil until slightly thickened. You can also add chopped nuts to the icing, if desired. Spread on cooled cake.
