Ingredients

  • 1/2 c
    margarine, softened
  • 1-1/2 c
    light brown sugar
  • 2 large
    eggs
  • 1-1/2 tsp
    vanilla flavoring (recipe don't call for it, but i add it)
  • 2 c
    all-purpose flour
  • 1/2 tsp
    salt
  • 1/2 tsp
    soda
  • 1/4 c
    buttermilk
  • 1 c
    mashed bananas
  • 1 c
    chopped nuts
  • ICING

  • 1 stick
    margarine
  • 1 c
    light brown sugar
  • 2/3 c
    evaporated milk
  • 1-1/2 tsp
    vanilla flavoring (recipe don't call for it, but i add it)

How to Make Banana Nut Cake

Step-by-Step

  1. Cream sugar, butter, eggs and flavoring until fluffy and smooth. Sift together flour, salt and soda; add to dry mixture, alternating with buttermilk. Stir in bananas and chopped nuts.
  2. Pour into a greased 9 inch square pan (I use a 9 x 9 x 2). Bake at 350 for 45 minutes.
  3. In a small saucepan, combine all ingredients. Boil until slightly thickened. You can also add chopped nuts to the icing, if desired. Spread on cooled cake.
