Preheat oven to 350 degrees; spray 3 9-inch cake pans with Pam.
Cream sugar and shortening together with mixer.
Add mashed banans, eggs and vanilla; mix well.
In small bowl, combine flour, salt, baking powder and baking soda.
Add dry ingredients to banana mixture alternately with buttermilk. Beat 3 minutes on medium.
Stir in pecans; pour batter into pans. Bake 30 minutes
FROSTING: Beat together bananas, butter and powdered sugar. Add additional powdered sugar if needed to achieve spreading consistency. Stir in pecans.
Spread frosting making a triple layer cake.
