Ingredients
- CAKE
- 2 1/4 cups sugar
- 3/4 cup solid vegetabble shortening
- 1 1/2 cups bananas, mashed, ripe (3 bananas)
- 3 - eggs
- 1 1/2 teaspoons vanilla extract
- 3 cups all purpose flour
- 1 teaspoon salt
- 1 1/2 teaspoons baking powder
- 1 1/4 teaspoons baking soda
- 1 cup buttermilk
- 1 1/2 cups pecans, chopped (optional)
- FROSTING
- 1 cup bananas, mashed, ripe (2 bananas)
- 3 tablespoons butter, softened
- 2 cups powdered sugar
- 1 1/2 cups pecans, chopped (optional)
How To Make banana nut cake

Step 1Preheat oven to 350 degrees; spray 3 9-inch cake pans with Pam.

Step 2Cream sugar and shortening together with mixer.

Step 3Add mashed banans, eggs and vanilla; mix well.

Step 4In small bowl, combine flour, salt, baking powder and baking soda.

Step 5Add dry ingredients to banana mixture alternately with buttermilk. Beat 3 minutes on medium.

Step 6Stir in pecans; pour batter into pans. Bake 30 minutes

Step 7FROSTING: Beat together bananas, butter and powdered sugar. Add additional powdered sugar if needed to achieve spreading consistency. Stir in pecans.

Step 8Spread frosting making a triple layer cake.
