This cake is delicious, and moist. I double the frosting. If you don't have maple flavoring, vanilla will do.

Ingredients
- 2 cups all purpose flour
- 1 1/3 cups sugar
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2 teaspoons instant coffee powder
- 1 teaspoon maple extract
- 1/2 cup shortening
- 1 cup milk
- 2 - eggs
- 1 medium banana, cut in half
- 1/2 cup chopped walnuts (optional) for topping
- FROSTING
- 1/2 - banana
- 1/4 cup butter, softened
- 1 teaspoon lemon juice
- 2 cups confectioners' sugar

Step 1preheat oven to 350 degrees, spray a 13x9 in cake pan.

Step 2In large bowl combine all ingredients except banana and reserved nuts.mix well and then add sliced 1/2 banana, mix for 3 min on med speed.

Step 3Pour into prepared pan, and bake for 25-30 minutes until top springs back when lightly touched. cool completely before frosting.

Step 4For Frosting. In small bowl mix banana, butter and lemon juice (may look a little curdled) blend in confectioners sugar and beat until creamy, frost cooled cake and sprinkle with chopped nuts if desired.
