This cake is delicious, and moist. I double the frosting. If you don't have maple flavoring, vanilla will do.

Ingredients For banana, maple cake (with a hint of coffee)

  • 2 c
    all purpose flour
  • 1 1/3 c
    sugar
  • 1 tsp
    salt
  • 1 tsp
    baking powder
  • 1 tsp
    baking soda
  • 2 tsp
    instant coffee powder
  • 1 tsp
    maple extract
  • 1/2 c
    shortening
  • 1 c
    milk
  • 2
    eggs
  • 1 md
    banana, cut in half
  • 1/2 c
    chopped walnuts (optional) for topping
  • FROSTING
  • 1/2
    banana
  • 1/4 c
    butter, softened
  • 1 tsp
    lemon juice
  • 2 c
    confectioners' sugar

How To Make banana, maple cake (with a hint of coffee)

    preheat oven to 350 degrees, spray a 13x9 in cake pan.

    In large bowl combine all ingredients except banana and reserved nuts.mix well and then add sliced 1/2 banana, mix for 3 min on med speed.

    Pour into prepared pan, and bake for 25-30 minutes until top springs back when lightly touched. cool completely before frosting.

    For Frosting. In small bowl mix banana, butter and lemon juice (may look a little curdled) blend in confectioners sugar and beat until creamy, frost cooled cake and sprinkle with chopped nuts if desired.
