banana cupcakes with creamy cream cheese frosting

I made these cupcakes for a gallery show that I was in for my art. I made a bunch of desserts and this was one of them. Unfortunately when taking a picture my camera's battery ran out and I didn't have my charger with me. So I am using a standard banana cake recipe pic. This is how I set up my banana cupcakes. I hope you enjoy the recipe as much as I do. I love banana cupcakes.

Ingredients

  • CUPCAKES
  • 1 3/4 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, room temperature
  • 3/4 cup sugar
  • 1-2 - large ripe banana
  • 2 - eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 1/2 cup whole milk
  • FROSTING
  • 1/2 cup butter, room temperature
  • 8 ounces cream cheese, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 pound powdered sugar
  • - yellow food coloring to tint frosting (optional)
  • - caramel ice cream topping for drizzling (optional)

How To Make banana cupcakes with creamy cream cheese frosting

  • Step 1
    Preheat oven to 350 degrees and line cupcake tray with 12 baking cups.
  • Step 2
    Sift together flour, baking powder and salt in a medium bowl with a wire whisk.
  • Step 3
    Cream butter and sugar in a mixer for about four minutes. Also add in the eggs and vanilla. Add banana and mix until combined.
  • Step 4
    Add half the flour in three additions alternating with milk in two additions. Scrape down the sides with each addition.
  • Step 5
    Bake for about 12-15 minutes or until done. Cool completely before frosting.
  • Step 6
    FOR FROSTING: Cream butter and cream cheese in mixer until thoroughly combined. Add vanilla. Then Add sugar in small batches until combined and creamy. Add a small amount of yellow food coloring to frosting and mix.
  • Step 7
    Top off each cupcake with a slice of banana. For an addition, drizzle caramel ice cream topping on each cupcake, (optional).
