These were my favorite cupcakes when I was growing up. I'm typing this from an old, yellowed recipe card from my aunt. They are really moist due to the sour milk. If you don't have sour milk, you can add a small amount of vinegar to sweet milk. Buttermilk could also be used. These cupcakes were also a favorite of my children and my husband. Enjoy!

Ingredients For banana cupcakes

  • 1/2 c
    shortening, butter flavor
  • 1 1/2 c
    sugar
  • 2
    eggs,beaten
  • 2 c
    flour
  • 1/2 tsp
    salt
  • 1 tsp
    baking powder
  • 3/4 tsp
    baking soda
  • 1/4 c
    sour milk
  • 1 c
    mashed bananas
  • 1 tsp
    vanilla extract

How To Make banana cupcakes

    Cream shortening with sugar, add eggs and beat with electric mixer.

    Sift dry ingredients and add alternately with milk and mashed bananas. Add vanilla

    Fill paper-lined cupcake pans half full and bake in 375 degree oven for 20 minutes. Cool and frost with cream cheese or vanilla frosting.
