banana cream cheese roll
The banana bread recipe is delicious on its own. My son thought of trying it this way for a dessert, and it turned out amazing. I made the banana part the night before I wanted it, so it could chill overnight, rolled up. You could do it the same day, as long as it cools completely in the freezer before putting the cream cheese filling in it. Enjoy!

- 4 large ripe bananas

How To Make banana cream cheese roll
-
Step 1Preheat oven to 350 degrees F. Prep your pan. I used a restaurant-sized 19"x 14" sheet pan. You can use 2 small sheet pans, 13"x9.5". Baking time could vary. Use parchment paper on sheet pans, then spray with cooking spray and sprinkle with cinnamon sugar blend.
-
Step 2Mix flour, sugar, cinnamon, baking soda, and salt in a large bowl.
-
Step 3Beat eggs in a small bowl. Then add oil, water, and pure vanilla extract. Mix well. Then add to the dry ingredients. Use a spatula to get all the ingredients. Mix well.
-
Step 4Cut bananas lengthwise into quarters. Then slice quarters into 1/4" slices. Do not mash bananas. Fold bananas into the mixture. Then spread onto parchment paper evenly.
-
Step 5Bake in a preheated oven. Start testing with a toothpick at 30 minutes, 20 minutes if using a smaller pan. When the toothpick comes out clean, place on the rack to cool for a few minutes.
-
Step 6While still warm and pliable, sprinkle with cinnamon and sugar.
-
Step 7Top with another parchment paper and a towel, and roll up. My pan I rolled from the long end. Small pans roll from the short pan. Now place in refrigerator or freezer to cool completely.
-
Step 8Mix up the filling ingredients after the roll is completely cooled.
-
Step 9Carefully unroll the banana bread, removing the towel and parchment paper. Spread the banana bread with the filling.
-
Step 10Then roll back up. Cover and place in the refrigerator for at least 30 minutes.
-
Step 11When you take the roll out to serve, slice the uneven ends off.
-
Step 12This part is optional. Top it with your favorite cream cheese frosting mixed with more maple cinnamon syrup. Warm it slightly and drizzle over the top. You could always sprinkle with confectioners' sugar. Slice and serve.
