banana coffee cake
I got this recipe off of the Breadbeckers website. I used freshly ground soft white berries. This cake is so moist and delicious.

Ingredients
- 3 cups half whole wheat flour & half white or use all freshly ground soft white berries
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon nutmeg
- 2 cups mashed ripe banana
- 2/3 cup honey
- 1/3 cup oil, melted butter or applesauce
- 2 teaspoons vanilla
- 2 large eggs
- TOPPING
- 1/2 cup brown sugar
- 2 tablespoons water
- 1 1/2 tablespoons butter
- 1/4 cup walnuts
- 1/4 cup unsweetened coconut (if using sweetened just reduce amount of brown sugar)
How To Make banana coffee cake

Step 1Combine dry ingredients.

Step 2Combine bananas, honey, oil, vanilla & eggs until well blended.

Step 3Add flour mixture & beat well.

Step 4Pour batter in well greased 13 x 9 baking pan.

Step 5Bake at 350' for about 30 minutes or until a toothpick inserted comes out clean.

Step 6Place all the topping ingredients in a small saucepan.

Step 7Simmer for 1 minutes over medium heat while stirring.

Step 8Remove from heat & stir in the coconut & nuts.

Step 9Spread over the cake.
