I tend to make up recipes depending on how many ingredients I have on hand, this one was browning bananas & excess carrots.

Ingredients For banana carrot cake

    flour
  • 1 tsp
    baking soda
  • 1 tsp
    baking powder
  • 1/2 c
    white sugar
  • 1/2 c
    light brown sugar
  • pinch
    salt
  • 2
    eggs, room temp
  • 1 Tbsp
    vanilla
  • 2
    ripe bananas
  • 2 c
    shredded carrots
  • 1/4 c
    coconut oil
  • 1 tsp
    cinnamon

How To Make banana carrot cake

    in a large bowl combine, flour, baking soda, baking powder, salt & cinnamon

    in another bowl cream the eggs and sugar, add in mashed bananas, fold in shredded carrots

    in another bowl cream the eggs, sugar & coconut oil add in mashed bananas, fold in shredded carrots

    add the flour mix to the wet ingredients, divide batter into 2 buttered cake pans bake at 350 degrees for about 45 mins or until toothpick in center comes out clean.

    I frosted with cream cheese frosting=1 stick butter, 8oz cream cheese (both room temp) 2 cups powdered sugar, 1 teaspoon vanilla whip the butter and cream cheese well, add in powdered sugar and vanilla .
