- 1 1/2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 cup white sugar
- 1/2 cup light brown sugar
- pinch salt
- 2 eggs, room temp
- 1 tablespoon vanilla
- 2 ripe bananas
- 2 cups shredded carrots
- 1/4 cup coconut oil
- 1 teaspoon cinnamon
How To Make banana carrot cake

Step 1in a large bowl combine, flour, baking soda, baking powder, salt & cinnamon

Step 2in another bowl cream the eggs and sugar, add in mashed bananas, fold in shredded carrots

Step 3in another bowl cream the eggs, sugar & coconut oil add in mashed bananas, fold in shredded carrots

Step 4add the flour mix to the wet ingredients, divide batter into 2 buttered cake pans bake at 350 degrees for about 45 mins or until toothpick in center comes out clean.

Step 6I frosted with cream cheese frosting=1 stick butter, 8oz cream cheese (both room temp) 2 cups powdered sugar, 1 teaspoon vanilla whip the butter and cream cheese well, add in powdered sugar and vanilla .
