banana cake muffins with a struesel nut topping

I aways seem to have a couple bananas laying around turning brown after my husband eats his fill, that's what made me try this recipe. I changed an ingredient, and added nuts & and a strusel-nut topping to make it my own. I don't like bananas by themselves, but I love these muffins. I changed the name on 10/06/2011, since this is basically a banana cake recipe, I wanted the name to reflect that. Whatever they are, they are yummmmmmmy.

Ingredients

  • 2 1/4 cups flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 - eggs
  • 1 1/2 cups sugar
  • 1 cup mashed banana's
  • 1/2 cup shorteneing or butter (sub. applesauce)
  • 3/4 cup buttermilk or sour milk
  • 1 teaspoon vanilla
  • pinch nutmeg, opt
  • STRUESEL-NUT TOPPING
  • 1/2 cup brown sugar
  • 1/3 cup flour
  • 1/4 cup butter, room temp
  • 2/3 cup chopped nuts

How To Make banana cake muffins with a struesel nut topping

  • Step 1
    For STRUSEL Topping- Using a fork mix together brown sugar, flour and butter till crumbly, add nuts, and mix well. Set aside and mix muffins.
  • Step 2
    In a large bowl, combine flour, sugar, baking powder, baking soda & salt. Add banana's, shortening & vanilla. Mix well, add eggs, mix till smooth and well incorporated.
  • Step 3
    Pour mix into large muffing tins, this will bake approx. 12 large muffins. Sprinkle strusel topping on top, bake 350° for about 23-25 min, or till a toothpick inserted in middle comes out clean.
