Ingredients
- 1 2/3 cups sugar
- 2/3 cup softened, butter
- 2/3 cup butter milk or soured milk
- 4 medium ripe bananas
- 2 - eggs
- 2 1/2 cups flour
- 1 teaspoon salt
- 1 1/4 teaspoons each - baking soda & baking powder
- 1/2 - 3/4 cups chopped pecans - optional
- FROSTING
- 1 large banana
- lemon - juice
- 1/4 cup softened, butter
- 3 1/2 cups confectioners' sugar
How To Make ~ banana cake & banana frosting ~

Step 1Preheat oven to 350 degree F. Grease a couple 9 inch cake pans or a 9 x 13 baking dish or pan.

Step 2In a large bowl, cream butter and sugar, well and beat in buttermilk. Lightly beat in the eggs and banana's. In another bowl, sift together dry ingredients. Add to the wet mixture and beat just until incorporated. Stir in nuts if using. Spread evenly into prepared pan or pans. Place in oven and bake 25 - 30 minutes for individual cakes or 40 - 45 minutes for 9 x 13 or until a pick inserted into the center comes out clean. Cool completely.

Step 3Make frosting: Mash banana and sprinkle with 1/4 - 1/2 tsp lemon juice. Cream butter and 1 cup of sugar. Beat in the banana and add remaining sugar. If a stiffer frosting is desired add more sugar until you get desired consistency.

Step 4Frost cake, can sprinkle with more nuts as I did or leave as is. Enjoy!
