This is a cake not a loaf...also my son's favorite cake and one I make him every year on his birthday if I am close by. For the past 4 years I have been 2000 miles away so he didn't get his favorite cake so this year now that we are closer I hope to once more make him his favorite cake. This recipe comes from the cookbook....The Cake Mix Doctor...great book and a really good banana cake. I frost it with my "The Best Icing"flavored with banana extract...so yummy!! *Not my pic

Ingredients

  • 1 package plain yellow cake mix
  • 1/2 cup packed light brown sugar
  • 1 teaspoon cinnamon
  • 2 medium ripe bananas mashed (about 1 cup)
  • 1 cup water
  • 1/2 cup vegetable oil....sunflower is good and so is canola or corn oil
  • 3 large eggs
  • 2 teaspoons banana liqueur ..optional...i have never added this

How To Make banana cake

  • Step 1
    Preheat oven to 350. Grease and flour 2 - 9 inch round pans. Mix together cake mix, brown sugar and cinnamon in a large mixing bowl.Add mashed banana, water, oil eggs and liquer if using.Blend with a mixer on low speed for 1 min.Increase speed and beat 2 mins more. Scrape down sides of bowl. The batter should look well blended. Pour into prepared pans. Bake approx 30 - 32 mins until toothpick comes out clean. Cool on wire rack. Frost with you favorite frosting. I use a cooked frosting and it is awesome. Sprinkle chopped pecans over top. So delicious!!
  • Step 2
    THE BEST FROSTING 3 Tbsp corn starch 1 c milk 1/2 c butter 1/2 c shortening 1 c sugar 1 tsp banana extract Pour milk into a saucepan and slowly add the corn starch tablespoon at a time over low hear till thickened. Stir constantly for about 5 minutes. Remove from heat and cool till mixture is cool to touch. Cream butter and sugar . Add a small portion of the cornstarch mixture and beat with a mixer. Slowly add till all is gone and keep beating till icing is thick and creamy and fairly stiff. Make sure all sugar crystals are dissolved. Enjoy!!
