This Banana Cake is really delicious! The flavor of the banana really comes through. I used a Milk Chocolate Frosting, which I purchased at Aldi's, to frost the cake. I bet their cream cheese frosting, as well as their vanilla and regular chocolate frosting, would be delicious on this cake as well.

Ingredients

  • 3/4 cup butter
  • 1-1/2 cup granulated sugar (or 36 packets of saccharin sweetener)
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup sour milk (see *note)
  • 1 cup mashed bananas
  • 2-1/2 can all-purpose flour
  • 1/2 tablespoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder

How To Make banana cake

  • Step 1
    In a large bowl, mix together the butter, sugar, eggs and vanilla extract. Set this aside.
  • Step 2
    In another bowl, sift together the flour, salt, baking soda, and baking powder
  • Step 3
    Add the dry ingredients to the creamed mixture.
  • Step 4
    Add the sour milk and mashed bananas to the batter. Beat this together well.
  • Step 5
    Grease and flout the inside of a 9x13-inch cake pan. (I used Crisco All-Vegetable Shortening to coat the inside of the pan.)
  • Step 6
    Bake the cake in a 350°F oven for 30 minutes.
  • Step 7
    Allow the cake to cool, then frost the cake. (I frosted the cake with Baker's Corner Milk Chocolate Rich & Ready Frosting. But you could frost the cake with either a vanilla frosting, or cream cheese frosting, or Baker's Corner Chocolate Frosting.
  • Step 8
    After I frosted the cake, I topped the cake with chopped pecans. Lightly pressing the chopped pecans into the frosting. I did refrigerate this cake, but I did not cover the cake while it's in the refrigerator.
  • Step 9
    *Note: To make sour milk, I added 1 Tablespoon of 5% white vinegar to an 8-ounce glass measuring cup. I then poured the 2% milk up to the 3/4 cup mark. Let this sit for 5 minutes, then add the remaining ingredients.
