A banana bread with coconut which keeps in the moisture, it's so flavorful, my family and friends love this. This is great as a dessert or toasted for breakfast.It freezes well also.

Ingredients

  • 3 c
    flour
  • 1 tsp
    baking soda
  • 3/4 tsp
    salt
  • 3
    extra large eggs
  • 2 c
    sugar
  • 1 1/3 c
    vegetable oil
  • 2 Tbsp
    vanilla
  • 1 1/2 c
    mashed banana(about 3 medium)
  • 1 c
    shredded coconut
  • 1 c
    walnut, chopped
  • 1/2 c
    buttermilk

How to Make Banana Bread with Coconut and Walnuts by Rose

Step-by-Step

  1. Preheat oven to 350, grease and flour (2) 9x5 inch loaves. Whisk together the flour, baking soda and salt and set aside. In mixer beat eggs, sugar and vegetable oil. Add the flour mixture, the vanilla, bananas, coconut walnuts, and buttermilk,until just combined. Spread evenly into 2 loaf pans. Bake for 60 minutes, test.They can be frozen, iced if you want to and toasted for breakfast. Very versatile banana bread. Enjoy.
