I mash the bananas with a potato masher but when in a hurry I have used a food processor and it works fine. Also, I prefer to use 2-4"x8" pans when I make this and freeze the second loaf.

baking soda
1/2 tsp

very ripe bananas
1 tsp
vanilla extract
1/2 c
vegetable oil
1 tsp
1 c
chopped walnuts or pecans, optional

How to Make Banana Bread


  • 1Preheat oven to 350 degrees. Spray loaf pan (or 2-8x4 pans.)
  • 2Mash bananas and set aside.
  • 3In a medium bowl combine flour, baking soda and powder, salt.
  • 4In a large bowl cream together eggs and sugar
  • 5Stir in mashed bananas, vanilla, oil and cinnamon.
  • 6Stir in flour mixture, a third at a time, until just combined.
  • 7Pour into prepared pan and bake for an hour. If using smaller pans, check in 40 minutes.
