I mash the bananas with a potato masher but when in a hurry I have used a food processor and it works fine. Also, I prefer to use 2-4"x8" pans when I make this and freeze the second loaf.

Ingredients
- 2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup sugar
- 2 - eggs
- 4 - very ripe bananas
- 1 teaspoon vanilla extract
- 1/2 cup vegetable oil
- 1 teaspoon cinnamon
- 1 cup chopped walnuts or pecans, optional
How To Make banana bread

Step 1Preheat oven to 350 degrees. Spray loaf pan (or 2-8x4 pans.)

Step 2Mash bananas and set aside.

Step 3In a medium bowl combine flour, baking soda and powder, salt.

Step 4In a large bowl cream together eggs and sugar

Step 5Stir in mashed bananas, vanilla, oil and cinnamon.

Step 6Stir in flour mixture, a third at a time, until just combined.

Step 7Pour into prepared pan and bake for an hour. If using smaller pans, check in 40 minutes.
