I mash the bananas with a potato masher but when in a hurry I have used a food processor and it works fine. Also, I prefer to use 2-4"x8" pans when I make this and freeze the second loaf.

Ingredients

  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 2 - eggs
  • 4 - very ripe bananas
  • 1 teaspoon vanilla extract
  • 1/2 cup vegetable oil
  • 1 teaspoon cinnamon
  • 1 cup chopped walnuts or pecans, optional

How To Make banana bread

  • Step 1
    Preheat oven to 350 degrees. Spray loaf pan (or 2-8x4 pans.)
  • Step 2
    Mash bananas and set aside.
  • Step 3
    In a medium bowl combine flour, baking soda and powder, salt.
  • Step 4
    In a large bowl cream together eggs and sugar
  • Step 5
    Stir in mashed bananas, vanilla, oil and cinnamon.
  • Step 6
    Stir in flour mixture, a third at a time, until just combined.
  • Step 7
    Pour into prepared pan and bake for an hour. If using smaller pans, check in 40 minutes.
