I mash the bananas with a potato masher but when in a hurry I have used a food processor and it works fine. Also, I prefer to use 2-4"x8" pans when I make this and freeze the second loaf.

Ingredients

  • 2 c
    flour
  • 1 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1 c
    sugar
  • 2
    eggs
  • 4
    very ripe bananas
  • 1 tsp
    vanilla extract
  • 1/2 c
    vegetable oil
  • 1 tsp
    cinnamon
  • 1 c
    chopped walnuts or pecans, optional

How to Make Banana Bread

Step-by-Step

  1. Preheat oven to 350 degrees. Spray loaf pan (or 2-8x4 pans.)
  2. Mash bananas and set aside.
  3. In a medium bowl combine flour, baking soda and powder, salt.
  4. In a large bowl cream together eggs and sugar
  5. Stir in mashed bananas, vanilla, oil and cinnamon.
  6. Stir in flour mixture, a third at a time, until just combined.
  7. Pour into prepared pan and bake for an hour. If using smaller pans, check in 40 minutes.
