I just love this mixed fresh fruit upside down cake. This is a delicious dessert recipe my Grandma gave me years ago.

I like French Vanilla ice cream served with this dessert.

Ingredients

  • 3 Tbsp
    butter / margarine
  • 1/2 c
    brown sugar, firmly packed
  • 2 pt
    fresh strawberries
  • 3 Tbsp
    grated orange rind
  • 1 large
    orange ; peeled and sectioned
  • 1/2 c
    flaked coconut
  • 14oz. pkg
    orange muffin mix

How to Make Baked Mixed Fruit Dessert

Step-by-Step

  1. Melt butter in a 9" square baking dish ; Sprinkle brown sugar over top of the melted butter.
  2. Combine strawberries , grated orange rind and wedges , and the coconut together in a medium bowl.
  3. Arrange fruit mixture over top of the brown sugar.
  4. Prepare the muffin mix according to the package directions and pour over top of the fruit.
  5. bake in pre-heated oven @ 400° for 40 minutes or until done. Serve warm.
