Ingredients

  • 4 - beaten eggs
  • 2 1/2 cups flour
  • 2 cups sugar
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 1/2 cups oil
  • 1 cup pecans, in pieces
  • 3 jars small jars of baby food carrots
  • 3 1/2 cups powered sugar
  • 8 ounces softened cream cheese
  • 1/2 teaspoon vanilla extract
  • 1 stick real butter

How To Make baby food carrot cake & cream cheese frosting

  • Step 1
    Reheat oven to 350 degrees, greased & flour a 9x13 pan and set aside. In a large mixing bowl add the first 9 ingredients and mix till well blended. Put into greased & floured 9x13 pan and bake for 50 minutes or until tooth pick comes out clean. This recipe is also great for cupcakes, but shorten the baking time.
  • Step 2
    For frosting, mix the last 4 ingredients at high speed till creamy. Make sure the cream cheese and butter are soften before making frosting. Spread onto cooled cake.
