Although this is a cake recipe,i thought i'd make cupcakes for Christmas.They were an absolute hit! When i posted the pic on facebook,i had a couple of people ask for the recipe.It's alittle work involved but it's sure worth it!

Ingredients

  • 3 c
    grated carrots
  • 2 c
    all purpose flour
  • 2 c
    white sugar
  • 2 tsp
    baking soda
  • 1 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1 tsp
    cinnamon
  • 4
    eggs
  • 1 1/2 c
    vege oil
  • 1 1/4 tsp
    vanilla
  • 1 can(s)
    8 oz. pineapple,crushed in juice
  • 3/4 c
    chopped pecans
  • 3 1/2 c
    confectioners' sugar
  • 1 pkg
    8 oz. cream cheese,softened
  • 1/2 c
    butter,softened
  • 1 1/4 tsp
    vanilla extract
  • 1 c
    chopped pecans

How to Make AWESOME CARROT CAKE WITH CREAM CHEESE FROSTING

Step-by-Step

  1. Preheat oven to 350 degrees.Grease and flour cake pan or use paper-lined cupcake pan.
  2. In a large bowl,combine carrots,flour,sugar,baking soda,baking powder,salt and cinnamon.
  3. Stir in eggs,oil,1 1/4 vanilla,pineapple and 3/4 cup pecans.Spoon batter into prepared pans.
  4. Bake for 30 to 40 miutes or till toothpick inserted in middle comes out clean.Allow to cool.
  5. TO MAKE FROSTING:In a medium bowl,combine confectioners sugar,cream cheese,1/2 cup butter and 1 1/4 tsp. vanilla. Beat until smooth,then stir in remaining pecans.I put the frosting in a ziplock bag,snipped off a corner and piped it onto cupcakes.ENJOY!
