Although this is a cake recipe,i thought i'd make cupcakes for Christmas.They were an absolute hit! When i posted the pic on facebook,i had a couple of people ask for the recipe.It's alittle work involved but it's sure worth it!
1Preheat oven to 350 degrees.Grease and flour cake pan or use paper-lined cupcake pan.
2In a large bowl,combine carrots,flour,sugar,baking soda,baking powder,salt and cinnamon.
3Stir in eggs,oil,1 1/4 vanilla,pineapple and 3/4 cup pecans.Spoon batter into prepared pans.
4Bake for 30 to 40 miutes or till toothpick inserted in middle comes out clean.Allow to cool.
5TO MAKE FROSTING:In a medium bowl,combine confectioners sugar,cream cheese,1/2 cup butter and 1 1/4 tsp. vanilla. Beat until smooth,then stir in remaining pecans.I put the frosting in a ziplock bag,snipped off a corner and piped it onto cupcakes.ENJOY!
