awesome carrot cake with cream cheese frosting

Although this is a cake recipe,i thought i'd make cupcakes for Christmas.They were an absolute hit! When i posted the pic on facebook,i had a couple of people ask for the recipe.It's alittle work involved but it's sure worth it!

Ingredients

  • 3 cups grated carrots
  • 2 cups all purpose flour
  • 2 cups white sugar
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 4 - eggs
  • 1 1/2 cups vege oil
  • 1 1/4 teaspoons vanilla
  • 1 can 8 oz. pineapple,crushed in juice
  • 3/4 cup chopped pecans
  • 3 1/2 cups confectioners' sugar
  • 1 package 8 oz. cream cheese,softened
  • 1/2 cup butter,softened
  • 1 1/4 teaspoons vanilla extract
  • 1 cup chopped pecans

How To Make awesome carrot cake with cream cheese frosting

  • Step 1
    Preheat oven to 350 degrees.Grease and flour cake pan or use paper-lined cupcake pan.
  • Step 2
    In a large bowl,combine carrots,flour,sugar,baking soda,baking powder,salt and cinnamon.
  • Step 3
    Stir in eggs,oil,1 1/4 vanilla,pineapple and 3/4 cup pecans.Spoon batter into prepared pans.
  • Step 4
    Bake for 30 to 40 miutes or till toothpick inserted in middle comes out clean.Allow to cool.
  • Step 5
    TO MAKE FROSTING:In a medium bowl,combine confectioners sugar,cream cheese,1/2 cup butter and 1 1/4 tsp. vanilla. Beat until smooth,then stir in remaining pecans.I put the frosting in a ziplock bag,snipped off a corner and piped it onto cupcakes.ENJOY!
