1mix together the sugar, oil, eggs, nutmeg, ginger and mix well. smash up the bananas and add to mixture. Add flour and instant pudding mix and mix until just combined, then mix in the broken chocolate (break up the chocolate until quite small pieces).
2fill muffin cups until half full, bake in a pre-heated 350 oven for 25-30 minutes, check after 25 minutes by sticking a sharp knife of toothpick into the center of the cupcakes. Ice cooled cupcakes with Nutella chocolate spread.
