My mom used to make avocado sandwiches for my brothers and I when we were young kids. I must admit, they were very good.
So an avocado cupcake to me must be delicious!

Ingredients

1 c
sugar
1/2 c
butter
2
eggs
1 c
avocado, mashed
1/2 c
buttermilk
1 tsp
baking soda
1 1/2 c
flour
1/2 tsp
nutmeg
1/2 tsp
cinnamon
1/2 tsp
allspice
1/2 c
nuts, your choice

FROSTING:

2 pkg
8 oz. each cream cheese, softened
1/2 c
butter, softened
2 c
confectioner's sugar, sifted
1 tsp
vanilla extract

How to Make AVOCADO CUPCAKES W/CREAM CHEESE FROSTING

Step-by-Step

  • 1Preheat oven to 350 degrees. Prep 12-cup muffin tin with liners.
  • 2Cream butter and sugar, add the eggs and avocado, mix well.
  • 3Add the baking soda to the buttermilk and add to the batter.
  • 4Add the spices to the flour, then add flour mixture to the batter, mix well.
  • 5Dust the nuts lightly with flour and add to the batter.
  • 6Pour evenly into the muffin tin.
  • 7Bake for 35 to 40 minutes. Remove from the oven and let cool completely.
  • 8FROSTING:
  • 9In a medium bowl, cream together the cream cheese and the butter until creamy.
  • 10Mix in vanilla and then gradually add in the confectioner's sugar.
  • 11Be sure that the cupcakes are cooled, then frost the cupcakes. Store the remaining frosting in the refrigerator.
