avocado cupcakes w/cream cheese frosting
My mom used to make avocado sandwiches for my brothers and I when we were young kids. I must admit, they were very good. So an avocado cupcake to me must be delicious!

Makes one dozen
Ingredients
- 1 cup sugar
- 1/2 cup butter
- 2 - eggs
- 1 cup avocado, mashed
- 1/2 cup buttermilk
- 1 teaspoon baking soda
- 1 1/2 cups flour
- 1/2 teaspoon nutmeg
- 1/2 teaspoon cinnamon
- 1/2 teaspoon allspice
- 1/2 cup nuts, your choice
- FROSTING:
- 2 packages 8 oz. each cream cheese, softened
- 1/2 cup butter, softened
- 2 cups confectioner's sugar, sifted
- 1 teaspoon vanilla extract

Step 1Preheat oven to 350 degrees. Prep 12-cup muffin tin with liners.

Step 2Cream butter and sugar, add the eggs and avocado, mix well.

Step 3Add the baking soda to the buttermilk and add to the batter.

Step 4Add the spices to the flour, then add flour mixture to the batter, mix well.

Step 5Dust the nuts lightly with flour and add to the batter.

Step 6Pour evenly into the muffin tin.

Step 7Bake for 35 to 40 minutes. Remove from the oven and let cool completely.

Step 8FROSTING:

Step 9In a medium bowl, cream together the cream cheese and the butter until creamy.

Step 10Mix in vanilla and then gradually add in the confectioner's sugar.

Step 11Be sure that the cupcakes are cooled, then frost the cupcakes. Store the remaining frosting in the refrigerator.
