avocado brownies with english toffee & hazelnuts

Avocado Brownies were introduced to me by a veteran baker, Pat. I had previously made Black Bean Brownies, and I figured I would try my hand at these creamy ones. These are sure to delight, so eat up before they are all gone!

Ingredients

  • AVOCADO BROWNIES
  • 1 - avocado, ripe
  • 2 tablespoons butter
  • 1/2 cup precreamed shortening
  • 2 ounces unsweetened dark chocolate, melted in 2 tbsp milk
  • 4 tablespoons hersey's special dark cocoa powder
  • 1 teaspoon instant coffee powder
  • 1 cup dark brown sugar
  • 1/2 cup white sugar
  • 2 - eggs
  • 1 tablespoon vanilla
  • 1 pinch salt
  • 1 cup flour
  • 1/4 cup english toffee pieces
  • 1/4 cup dark chocolate chips
  • 1/4 cup chopped hazelnuts
  • AVOCADO FROSTING
  • 1 - avocado, ripe
  • 1 tablespoon lemon juice
  • 1/4 cup heavy cream
  • 1/2 package cream cheese
  • 1/2 stick butter
  • 2 1/2 cups confectioners' sugar
  • - green colored sugar, optional
  • - halloween decor, optional
  • - a few drops of green food coloring, optional

How To Make avocado brownies with english toffee & hazelnuts

  • Step 1
    In a mixing bowl, cream shortening, butter, eggs, and sugars for about 3 minutes.
  • Step 2
    Add avocado and vanilla. Continue to beat.
  • Step 3
    Then add flour, coffee, cocoa, and salt. Beat well for 5 minutes.
  • Step 4
    Fold in toffee and chips. When well mixed, pour into a Pyrex casserole dish pre-sprayed with Baker's Joy.
  • Step 5
    Sprinkle hazelnuts atop.
  • Step 6
    Bake at 350F for 20-30 minutes. Until sides pull away a bit and center is set and when toothpick is inserted, comes out clean.
  • Step 7
    Let cool totally before inverting and slicing.
  • Step 8
    To make frosting, place all frosting ingredients in a mixing bowl and beat well. Refrigerate while you wait. Then fill a piping bag, and pipe in swirls atop cooled, cut brownies. Optionally, sprinkle with green colored sugar.
