Ingredients

  • 400 grams cream cheese, softened
  • 70 grams fine granulated sugar
  • 3 - eggs, beaten
  • 10 grams lemon juice
  • 200 grams whipping cream
  • 5 grams cornstarch

How To Make authentic basque cheesecake

  • Step 1
    Spread oil paper on a 6 inch cake mould and preheat the oven to 220℃.
  • Step 2
    Add cream cheese to the main pan.
  • Step 3
    Add fine granulated sugar.
  • Step 4
    Put on the measuring cup and mix the materials at 30sec/REV 5.
  • Step 5
    Scrape the materials to the bottom of the pot with a scraper.
  • Step 6
    Start stirring at 30sec/REV 5, and pour the eggs in slowly at the same time.
  • Step 7
    Add lemon juice, whipping cream and cornstarch.
  • Step 8
    Mix the materials at 30sec/REV 5.
  • Step 9
    Sift the batter and pour it into the mould.
  • Step 10
    Bake the mould in the oven for about 35 minutes, and color the tin foil after its surface’ color changes.
  • Step 11
    Take out and cool the mould. Place the mould in a refrigerator for one night before enjoying.
