I found this recipe years ago when I was in Columbus, OH. It is a perfect cake when you are looking for something unusual.

Ingredients
- 2 cups all purpose, unbleached flour
- 1 3/4 cups sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup vegetable oil
- 2 jars apricot baby food (4 1/2 oz each)
- 3 - eggs
- 2 teaspoons vanilla extract
- 1 teaspoon cinnamon
- 1/2 teaspoon cloves
- 1/2 cup apricot preserves
- FROSTING
- 3 cups powdered sugar
- 3 tablespoons butter, softened
- 2-3 tablespoons light cream or half-and-half
- 2 tablespoons bourbon

Step 1Preheat oven to 350 degrees.

Step 2Combine all the cake ingredients except the apricot preserves and beat at medium speed for two minutes.

Step 3Pour into two greased and floured 8"round pans, and bake for 30-35 minutes, or until a toothpick inserted near the center comes out clean; let cool in pans 10 minutes, then remove from pans and cool on wire racks.

Step 4To make the frosting, combine everything in a medium sized bowl and beat with a mixer until spreading consistency.

Step 5To assemble, top one layer with the apricot preserves; top with second layer. Spread the top and sides with frosting.
