2 call purpose, unbleached flour

1 3/4 csugar

1 Tbspbaking powder

1/2 tspsalt

1 cvegetable oil
-
2 jar(s)apricot baby food (4 1/2 oz each)

3eggs

2 tspvanilla extract

1 tspcinnamon

1/2 tspcloves

1/2 capricot preserves
-
FROSTING
-
3 cpowdered sugar
-
3 Tbspbutter, softened
-
2-3 Tbsplight cream or half-and-half
-
2 Tbspbourbon
How to Make Apricot Bourbon Cake
- Preheat oven to 350 degrees.
- Combine all the cake ingredients except the apricot preserves and beat at medium speed for two minutes.
- Pour into two greased and floured 8"round pans, and bake for 30-35 minutes, or until a toothpick inserted near the center comes out clean; let cool in pans 10 minutes, then remove from pans and cool on wire racks.
- To make the frosting, combine everything in a medium sized bowl and beat with a mixer until spreading consistency.
- To assemble, top one layer with the apricot preserves; top with second layer. Spread the top and sides with frosting.
