I found this recipe years ago when I was in Columbus, OH. It is a perfect cake when you are looking for something unusual.

Ingredients

  • 2 cups all purpose, unbleached flour
  • 1 3/4 cups sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup vegetable oil
  • 2 jars apricot baby food (4 1/2 oz each)
  • 3 - eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cloves
  • 1/2 cup apricot preserves
  • FROSTING
  • 3 cups powdered sugar
  • 3 tablespoons butter, softened
  • 2-3 tablespoons light cream or half-and-half
  • 2 tablespoons bourbon

How To Make apricot bourbon cake

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    Combine all the cake ingredients except the apricot preserves and beat at medium speed for two minutes.
  • Step 3
    Pour into two greased and floured 8"round pans, and bake for 30-35 minutes, or until a toothpick inserted near the center comes out clean; let cool in pans 10 minutes, then remove from pans and cool on wire racks.
  • Step 4
    To make the frosting, combine everything in a medium sized bowl and beat with a mixer until spreading consistency.
  • Step 5
    To assemble, top one layer with the apricot preserves; top with second layer. Spread the top and sides with frosting.
