My mom used to make many varieties of apricot dessert because I loved apricots. I remember taking this dessert bar to school in my lunch box. I ate my sweets first, then ate my lunch . . . shh!!!

Ingredients
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 teaspoon ground pepper
- 1 1/4 sticks butter, unsalted, softened
- 1 cup light brown sugar
- 2 teaspoons vanilla extract
- 2 large eggs
- 1 cup dried apricots, chopped
- 1/2 cup macadamia nuts, chopped
How To Make apricot blondies

Step 1Preheat oven to 325 degrees. Prep 8x8-inch square baking pan, use a non-stick spray.

Step 2In a medium bowl, sift together flour, baking powder, baking soda, salt and pepper.

Step 3In a separate bowl, using an electric mixer, cream butter, brown sugar and vanilla extract until well blended.

Step 4Beat in egg until mixture is smooth. Add flour mixture in 3 increments until a dough forms.

Step 5Mix in apricots and macadamia nuts.

Step 6Place the dough into prepared pan and use spatula to even the dough out.

Step 7Bake for 45 minutes, until the top is golden brown and a toothpick comes out clean.

Step 8Remove from the oven onto a wire rack to cool completely. Slice into squares.
