My mom used to make many varieties of apricot dessert because I loved apricots. I remember taking this dessert bar to school in my lunch box. I ate my sweets first, then ate my lunch . . . shh!!!

Ingredients

1 1/2 c
all-purpose flour
1 1/2 tsp
baking powder
1/2 tsp
baking soda
1/4 tsp
salt
1/4 tsp
ground pepper
1 1/4 stick
butter, unsalted, softened
1 c
light brown sugar
2 tsp
vanilla extract
2 large
eggs
1 c
dried apricots, chopped
1/2 c
macadamia nuts, chopped

How to Make APRICOT BLONDIES

Step-by-Step

  • 1Preheat oven to 325 degrees. Prep 8x8-inch square baking pan, use a non-stick spray.
  • 2In a medium bowl, sift together flour, baking powder, baking soda, salt and pepper.
  • 3In a separate bowl, using an electric mixer, cream butter, brown sugar and vanilla extract until well blended.
  • 4Beat in egg until mixture is smooth. Add flour mixture in 3 increments until a dough forms.
  • 5Mix in apricots and macadamia nuts.
  • 6Place the dough into prepared pan and use spatula to even the dough out.
  • 7Bake for 45 minutes, until the top is golden brown and a toothpick comes out clean.
  • 8Remove from the oven onto a wire rack to cool completely. Slice into squares.
