apricot blondies

My mom used to make many varieties of apricot dessert because I loved apricots. I remember taking this dessert bar to school in my lunch box. I ate my sweets first, then ate my lunch . . . shh!!!

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1 1/4 sticks butter, unsalted, softened
  • 1 cup light brown sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1 cup dried apricots, chopped
  • 1/2 cup macadamia nuts, chopped

How To Make apricot blondies

  • Step 1
    Preheat oven to 325 degrees. Prep 8x8-inch square baking pan, use a non-stick spray.
  • Step 2
    In a medium bowl, sift together flour, baking powder, baking soda, salt and pepper.
  • Step 3
    In a separate bowl, using an electric mixer, cream butter, brown sugar and vanilla extract until well blended.
  • Step 4
    Beat in egg until mixture is smooth. Add flour mixture in 3 increments until a dough forms.
  • Step 5
    Mix in apricots and macadamia nuts.
  • Step 6
    Place the dough into prepared pan and use spatula to even the dough out.
  • Step 7
    Bake for 45 minutes, until the top is golden brown and a toothpick comes out clean.
  • Step 8
    Remove from the oven onto a wire rack to cool completely. Slice into squares.
