I got this recipe from a coworker over 35 years ago. The cake is super moist and flavorful and the lemon frosting accents the flavor of the cake - so delicious!

Ingredients

  • 4 cups chopped apples
  • 2 cups sugar
  • 2 - eggs
  • ½ cup vegetable oil
  • 2 teaspoons vanilla
  • 2 cups all purpose flour
  • 2 teaspoons baking soda (dissolve in bit of water)
  • 2 teaspoons cinnamon
  • 1 teaspoon salt
  • 1 cup chopped walnuts or pecans
  • 4 tablespoons butter
  • 3 cups powdered sugar
  • 2 tablespoons lemon juice
  • 1-2 tablespoon cold water

How To Make apple walnut cake with lemon butter frosting

  • Step 1
    Combine apples and sugar and set aside.
  • Step 2
    Beat eggs. Beat in oil and vanilla.
  • Step 3
    Mix flour, soda, cinnamon and salt. Stir in alternately with sugar-apple mixture.
  • Step 4
    Stir in nuts. Pour into greased 9 x 13 pan. Bake at 350° for 1 hour and cool.
  • Step 5
    Frosting: Cream 4 TBSP butter. Add the 3 cups of powdered sugar. Beat in lemon juice (2 TBSP) and enough cold water (1-2 TBSP) to make icing spread easily. Beat and apread on cake.
