I got this recipe from a coworker over 35 years ago. The cake is super moist and flavorful and the lemon frosting accents the flavor of the cake - so delicious!

Ingredients

4 c
chopped apples
2 c
sugar
2
eggs
½ c
vegetable oil
2 tsp
vanilla
2 c
all purpose flour
2 tsp
baking soda (dissolve in bit of water)
2 tsp
cinnamon
1 tsp
salt
1 c
chopped walnuts or pecans
4 Tbsp
butter
3 c
powdered sugar
2 Tbsp
lemon juice
1-2 Tbsp
cold water

How to Make Apple Walnut Cake with Lemon Butter Frosting

Step-by-Step

  • 1Combine apples and sugar and set aside.
  • 2Beat eggs. Beat in oil and vanilla.
  • 3Mix flour, soda, cinnamon and salt.
    Stir in alternately with sugar-apple mixture.
  • 4Stir in nuts.
    Pour into greased 9 x 13 pan.
    Bake at 350° for 1 hour and cool.
  • 5Frosting: Cream 4 TBSP butter.
    Add the 3 cups of powdered sugar.
    Beat in lemon juice (2 TBSP) and enough cold water (1-2 TBSP) to make icing spread easily.
    Beat and apread on cake.
