I got this recipe from a coworker over 35 years ago. The cake is super moist and flavorful and the lemon frosting accents the flavor of the cake - so delicious!

Ingredients

  • 4 c
    chopped apples
  • 2 c
    sugar
  • 2
    eggs
  • ½ c
    vegetable oil
  • 2 tsp
    vanilla
  • 2 c
    all purpose flour
  • 2 tsp
    baking soda (dissolve in bit of water)
  • 2 tsp
    cinnamon
  • 1 tsp
    salt
  • 1 c
    chopped walnuts or pecans
  • 4 Tbsp
    butter
  • 3 c
    powdered sugar
  • 2 Tbsp
    lemon juice
  • 1-2 Tbsp
    cold water

How to Make Apple Walnut Cake with Lemon Butter Frosting

Step-by-Step

  1. Combine apples and sugar and set aside.
  2. Beat eggs. Beat in oil and vanilla.
  3. Mix flour, soda, cinnamon and salt.
    Stir in alternately with sugar-apple mixture.
  4. Stir in nuts.
    Pour into greased 9 x 13 pan.
    Bake at 350° for 1 hour and cool.
  5. Frosting: Cream 4 TBSP butter.
    Add the 3 cups of powdered sugar.
    Beat in lemon juice (2 TBSP) and enough cold water (1-2 TBSP) to make icing spread easily.
    Beat and apread on cake.
