I got this recipe from a coworker over 35 years ago. The cake is super moist and flavorful and the lemon frosting accents the flavor of the cake - so delicious!

Ingredients
- 4 cups chopped apples
- 2 cups sugar
- 2 - eggs
- ½ cup vegetable oil
- 2 teaspoons vanilla
- 2 cups all purpose flour
- 2 teaspoons baking soda (dissolve in bit of water)
- 2 teaspoons cinnamon
- 1 teaspoon salt
- 1 cup chopped walnuts or pecans
- 4 tablespoons butter
- 3 cups powdered sugar
- 2 tablespoons lemon juice
- 1-2 tablespoon cold water

Step 1Combine apples and sugar and set aside.

Step 2Beat eggs. Beat in oil and vanilla.

Step 3Mix flour, soda, cinnamon and salt. Stir in alternately with sugar-apple mixture.

Step 4Stir in nuts. Pour into greased 9 x 13 pan. Bake at 350° for 1 hour and cool.

Step 5Frosting: Cream 4 TBSP butter. Add the 3 cups of powdered sugar. Beat in lemon juice (2 TBSP) and enough cold water (1-2 TBSP) to make icing spread easily. Beat and apread on cake.
