I had apples that looked like they needed to be eaten or tossed and I am really tired of wasting fruit so decided to use them up. Most fruits can be used in the same way. I used the 4 apples I had but could have used less. Pears and peaches would be good too.

Ingredients

  • TOPPING
  • 4 tablespoons butter
  • 4 - apples
  • 2/3 cup light brown sugar
  • 2 teaspoons lemon juice
  • CAKE
  • 1 cup ap flour
  • 1 tablespoon cornmeal (optional for color and texture)
  • 1 teaspoon baking powder
  • 3/4 cup granulated sugar
  • 1/4 cup light brown sugar
  • 2 large eggs
  • 6 tablespoons butter (melted and cooled)
  • 1/2 cup sour cream
  • 1 teaspoon vanilla
  • 1/4 cup pecans (chopped fine)

How To Make apple upside down cake

  • Step 1
    Prepare a 9-inch cake pan with butter both side and bottom. Be sure it is at least 2 inches high.
  • Step 2
    Peel and core the apples. cut 1/4 inch to a 1/2-inch-thick slices. Heat the 4 tablespoons of butter in a skillet on high heat. After the foaming stops add the apples and cook until you get some browning.
  • Step 3
    Add the brown sugar and lemon juice stirring constantly until sugar dissolves and all the apples are coated. Add to bottom of prepared pan
  • Step 4
    Stir together the flour, cornmeal if you are using, baking powder together and set aside.
  • Step 5
    In another bowl stir together the sugars and eggs until thick. Slowly add the melted and cooled butter until combined. Next add the sour cream, vanilla and pecans
  • Step 6
    Add the flour mixture until just mixed and pour into pan spreading evenly over the fruit.
  • Step 7
    Bake at 350 for 35 to 40 minutes.
  • Step 8
    Cool on rack in the pan for at least 20 minutes to let the juices and fruit get a little solid. Once the juices firm up use a plastic knife to go around the pan to loosen the sides and flip out.
