Ingredients
- 1 1/2 pounds baking apples, peeled and cut into 1/3 inch pieces
- 12 tablespoons butter
- 1 1/4 cups sugar
- 2 1/2 cups flour
- 1/4 cup brown sugar
- 1 teaspoon lemon juice
- 1/2 teaspoon cinnamon
- 1 tablespoon pecans, finely chopped
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon ground allspice
- 1 egg, beaten
- 2/3 cup buttermilk

Step 1APPLES

Step 2Melt 2 tablespoons of butter in a saute pan. Add the apples, 1/2 cup sugar and lemon juice

Step 3Cook over medium heat until the sugar dissolves. Continue to cook, stirring as needed until the apples are tender and carmelized. Stir in cinnamon

Step 4COFFEE CAKE

Step 5Whisk together 1 1/2 cups flour with the baking powder, baking soda, allspice and a pinch of salt

Step 6In another bowl, beat together 4 tablespoons of butter with 3/4 cup sugar until light and pale yellow. Mix in egg until incorporated

Step 7Slowly beat in the buttermilk and the flour mixture in 3 alternating batches, ending with the flour mixture. Fold in the apples

Step 8Preheat the oven to 350. Spray a 9x9 inch baking pan with an oil spray and sprinkled flour

Step 9STREUSEL

Step 10Mix together 3/4 cup flour, brown sugar, pecans and 6 tablespoons cold butter, cut into cubes

Step 11Use your clean fingers to make crumbs

Step 12Pour the batter into the prepared pan and smooth the top. Crumble the streusel evenly over the top and bake for about 45 minutes or until a toothpick inserted into the center comes out clean
