I just made this for my Dad's birthday and it was so tasty I had to share! It's a keeper! So moist!! Typically I make cakes from scratch but to save time, I used a box mix.

We love that this apple cake is a jazzed-up spice mix box recipe. It makes a super simple fail-proof cake that's moist and full of spice and apples in every bite. On top is a rich and creamy cream cheese glaze that's gooey and delicious. Enjoy this cake year-round but especially in the fall. It's filled with wonderful fall spice flavors! Once we drizzled the glaze, we did dust it with a little extra cinnamon.

Ingredients For apple spice cake with cream cheese glaze

  • 1 box
    spice cake mix
  • 1 pkg
    instant vanilla pudding mix (3.4 oz)
  • 3 lg
  • 2/3 c
  • 1/2 c
    canola oil
  • 1/2 c
    sour cream
  • 1 lb
    Granny Smith apples, peeled and chopped (about 2 1/2 cups diced)
  • 2 oz
    cream cheese, softened
  • 1/2 Tbsp
    butter, softened
  • 3 Tbsp
  • 3 Tbsp
    powdered sugar
  • 1 tsp
    pure vanilla extract

How To Make apple spice cake with cream cheese glaze

  • Oven set to 350 degrees.
    Heat oven to 350 degrees.
  • Mixing cake mix, pudding mix, egg, water, oil, and sour cream in a bowl.
    Beat the first 6 ingredients in a large bowl with a mixer until well blended.
  • Chopped apples added to the batter.
    Stir in apples.
  • Batter poured into a greased Bundt pan.
    Pour into a well-greased and floured Bundt pan.
  • Apple spice cake baking in the oven.
    Bake 1 hour to 1 hour 5 min. or until a toothpick inserted near the center comes out clean.
  • Cooling the apple spice cake.
    Cool in pan for 15 min. Loosen the cake from the side of the pan with a knife (the cake will probably stick some). Invert cake onto wire rack; gently remove pan. Cool cake completely.
  • Mixing cream cheese, butter, milk, powdered sugar, and vanilla.
    When the cake is cooled, beat cream cheese, butter, and milk with an electric mixer. Gradually mix in powdered sugar. Beat until smooth. Add vanilla and beat until incorporated.
  • Apple Spice Cake With Cream Cheese Glaze.
    With a large spoon, spoon the icing onto the cake. Cover and refrigerate until ready to serve. Store in the refrigerator.
