apple spice cake

This cake is a Thanksgiving tradition in my house. This is my Great Aunt Lillian's recipe and I it has been in my family at least as long as my mother has been alive. It is moist and full of apples. Perfect for fall.

Ingredients
- 2 - eggs, beaten
- 1 cup vegetable oil
- 2 cups sugar
- 1/2 teaspoon cinnamon
- 1/2 teaspoon allspice, ground
- 1/2 teaspoon cloves, ground
- 1 teaspoon salt
- 1 teaspoon baking soda
- 2 1/2 cups all purpose flour
- 3 cups granny smith apples, cored and thinly sliced

Step 1Preheat oven 350F

Step 2Beat eggs, oil and sugar until thoroughly combined in a stand mixer.Mix together all dry ingredients in seperate bowl.

Step 3Add dry ingredients to wet and mix thoroughly. Fold in apples on low speed.

Step 4Pour in greased tube pan and bake for 55-60 minutes. Let cool for 10 minutes and then invert from pan onto serving plate. Cake makes its own icing as it cools.
