Thanks to the applesauce, apple juice concentrate and the apples, these are some apple intense muffins. And they're FABULOUS! The applesauce also helps make them really moist. The best part is how yummy your kitchen will smell while baking.

Ingredients

1 1/4 coat bran

1 cwhole wheat flour

2 tspcinnamon

1 tspbaking powder

3/4 tspbaking soda

1/2 tspsalt

2 Tbspbrown sugar

3/4 cunsweetened applesauce

3/4 capple juice, frozen concentrate

1/4 cvegetable oil
-
2 largeegg, whites
-
1 tspvanilla extract

1/4 cchopped walnuts or pecans

1/4 cchopped apple
How to Make Applesauce Cinnamon Muffins
- Preheat oven to 350. In a medium bowl, add first 6 ingredients and mix to combine well. In large mixing bowl combine rest of ingredients and beat well until creamy.
Stir dry ingredients into wet ingredients and mix well until no flour remains. - Fill paper liner in muffin pan almost full. Bake 15 - 20 minutes or until tooth pick comes out clean in center of muffin. Makes 1 dozen muffins.
