This year the apples are abundant in New York State. So I pulled every recipe card out I have that includes apples and got baking. The aroma of applesauce added to baked goods was so inviting.

Thanks to the applesauce, apple juice concentrate, and the apples, these are some apple intense muffins. They are fabulous! While baking, your kitchen will smell like fall. Baking with oat bran gives the muffins a slightly different texture. There's a slight cinnamon flavor and bits of apple in each bite. Not overly sweet, the tops are a little crunchy while inside the muffin is tender. A wonderful breakfast treat!

Ingredients For applesauce cinnamon muffins

  • 1 1/4 c
    oat bran
  • 1 c
    whole wheat flour
  • 2 tsp
    cinnamon
  • 1 tsp
    baking powder
  • 3/4 tsp
    baking soda
  • 1/2 tsp
    salt
  • 2 Tbsp
    brown sugar
  • 3/4 c
    unsweetened applesauce
  • 3/4 c
    apple juice, frozen concentrate
  • 1/4 c
    vegetable oil
  • 2 lg
    egg, whites
  • 1 tsp
    vanilla extract
  • 1/4 c
    chopped walnuts or pecans
  • 1/4 c
    chopped apple

How To Make applesauce cinnamon muffins

  • Oven preheating to 350 degrees.

    Preheat oven to 350.
  • Dry ingredients in a bowl.

    In a medium bowl, combine oat bran, whole wheat flour, cinnamon, baking powder, baking soda, and salt.
  • Wet ingredients whisked together in a bowl.

    In a large mixing bowl, whisk together brown sugar, applesauce, apple juice concentrate, oil, egg whites, and vanilla. Mix until combined well.
  • Wet and dry ingredients combined in a bowl.

    Stir dry ingredients into wet ingredients. Mix well until no flour remains.
  • Folding in apples and nuts.

    Fold in finely diced apples and nuts of choice.
  • Batter poured into muffin tins.

    Line muffin tin with paper liners and fill them until they are almost full. It should just be enough for 12.
  • Inside of an Applesauce Cinnamon Muffin.

    Bake 15 - 20 minutes or until a toothpick comes out clean in the center of the muffin.
