applesauce cinnamon muffins
This year the apples are abundant in New York State. So I pulled every recipe card out I have that includes apples and got baking. The aroma of applesauce added to baked goods was so inviting.
Blue Ribbon Recipe
Thanks to the applesauce, apple juice concentrate, and the apples, these are some apple intense muffins. They are fabulous! While baking, your kitchen will smell like fall. Baking with oat bran gives the muffins a slightly different texture. There's a slight cinnamon flavor and bits of apple in each bite. Not overly sweet, the tops are a little crunchy while inside the muffin is tender. A wonderful breakfast treat!

Ingredients
- 1 1/4 cups oat bran
- 1 cup whole wheat flour
- 2 teaspoons cinnamon
- 1 teaspoon baking powder
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 2 tablespoons brown sugar
- 3/4 cup unsweetened applesauce
- 3/4 cup apple juice, frozen concentrate
- 1/4 cup vegetable oil
- 2 large egg, whites
- 1 teaspoon vanilla extract
- 1/4 cup chopped walnuts or pecans
- 1/4 cup chopped apple
How To Make applesauce cinnamon muffins

Step 1Preheat oven to 350.

Step 2In a medium bowl, combine oat bran, whole wheat flour, cinnamon, baking powder, baking soda, and salt.

Step 3In a large mixing bowl, whisk together brown sugar, applesauce, apple juice concentrate, oil, egg whites, and vanilla. Mix until combined well.

Step 4Stir dry ingredients into wet ingredients. Mix well until no flour remains.

Step 5Fold in finely diced apples and nuts of choice.

Step 6Line muffin tin with paper liners and fill them until they are almost full. It should just be enough for 12.

Step 7Bake 15 - 20 minutes or until a toothpick comes out clean in the center of the muffin.
