THIS IS A SPECIAL CHEESECAKE I SERVE FOR SPECIAL OCCASIONS LIKE FAMILY BIRTHDAYS. MY WHOLE FAMILY LOVES CHEESECAKES AND I'M ALWAYS LOOKING AT NEW RECIPES. I FOUND THIS ONE IN ONE OF THOSE MAGAZINES AT THE END OF THE CHECKOUT AISLES AT THE GROCERY STORE YEARS AGO.

Ingredients
- 15 - pecan shortbread cookies
- 4 tablespoons butter melted
- 3 packages 8 oz. cream cheese, softened
- 1/4 cup light brown sugar
- 1/2 cup sugar
- 2 teaspoons ground cinnamon
- 1 teaspoon vanilla
- 3 - eggs
- 1 can apple pie filling
- 3 cups whipped topping
- 2 tablespoons caramel topping i use mrs. richardson's
How To Make apple pie cheesecake

Step 1PREHEAT OVEN TO 350' WRAP OUTSIDE OF SPRING FORM PAN WITH FOIL.

Step 2I GET KEEBLER COOKIES SO 15 IS HALF A BAG CRUSH THEM AND ADD MELTED BUTTER PRESS MIXTURE IN BOTTOM AND UP SIDE OF PAN.

Step 3ON MEDIUM SPEED BEAT CREAM CHEESE,BOTH SUGARS, CINNAMON, AND VANILLA UNTIL CREAMY. BEAT IN EGGS ONE AT A TIME. POUR 3 CUPS OF CHEESECAKE BATTER ONTO CRUST: SPOON ON APPLE PIE FILLING THEN POUR ON REMAINING BATTER.

Step 4BAKE 45 MINUTES OR UNTIL SET. TURN OFF OVEN AND LET CHEESECAKE STAND IN OVEN FOR 1 HOUR WITH DOOR SHUT. REMOVE FROM OVEN AND COOL COMPLETELY ON RACK.REMOVE FOIL AND REFRIGERATE UNTIL READY TO SERVE

Step 5REMOVE SIDE OF PAN. TOP WITH WHIPPING CREAM AND DRIZZLE CARAMEL TOPPING BACK AND FORTH ACROSS TOP, ENJOY.
