My husband and I stopped while on vacation down south at a small restaurant off the beaten path and fell in love with the dessert that was included with our meal. I had to ask about it and the waitress was very helpful, but stopped short about the recipe. After vacation I came home and after several tries I have finally perfected it at home. It is absolutely delicious.

Ingredients

APPLE PIE CAKE

1/4 c
butter, softened
1 c
sugar
1
egg
1 c
all purpose flour
1 tsp
salt
1 tsp
cinnamon
2 Tbsp
water
1 tsp
vanilla
3 c
peeled, diced cooking apples
1/2 c
chopped pecans

BUTTER RUM SAUCE

1/2 c
brown sugar, firmly packed
1/2 c
sugar
1/4 c
butter, softened
1/2 c
whipping cream
2 Tbsp
rum

How to Make Apple Pie Cake with Butter-Rum Sauce

Step-by-Step

  • 1Cream butter, gradually add sugar, beating well at medium speed.
  • 2Add egg; beat until blended.
  • 3Combine flour, salt, and cinnamon; mix well.
  • 4Add to creamed mixture; beat on low speed until smooth.
  • 5Stir in water and vanilla.
  • 6Fold in apples and pecans, spoon into greased and floured 9x9" baking dish.
  • 7Bake at 350 degrees for 45 minutes or until toothpick inserted in center comes out clean.
  • 8Serve warm or cold with Butter-Rum Sauce and a dollop of whipped cream.

  • 10Combine brown sugar, sugar, butter and whipping cream in small saucepan.
  • 11Bring to a boil, and cook 1 minute.
  • 12Remove from heat and stir in rum.
